Robot Rehab

Operator Error

(The most common cause of equipment failure.)

The flat blade to our Robot Coupe dicer looked like it had been used to chop gravel. Getting a new one would take a week. . . There's 40# of fresh salsa to be made, a bucket of mirepoix to be chopped, and it's Thursday evening, Chef!






It's a single-bevel blade made from fine-grained steel. The unit's design (sadly) allows for catastrophic blade damage if the unit is assembled incorrectly (as opposed to their other trusty equipment, which won't even turn on until all the parts are in the right place.) Well, what to do? I took a shot at grinding this blade back to life. Here's the "after" picture:
Those deep chips would require removing a lot more of the metal than my fine little stone would do in an hour of work, but they did sharpen up fairly well nonetheless.  It tested out fine the next day dicing a pile of carrot and fennel mirepoix for pork bellies.
