National Pistachio Day

Yes, it's a pretext for rationalizations on the nutritional merits of eating pistachio ice cream.

It's also a good reason to shave and go on the air to raise awareness about Dave Bailey's restaurants and some of the delights we serve.

You're famous! Which restaurant are you working in? Last I heard it was Pomme.

I'm the Commissary Executive Chef ('Commissar') for Dave Bailey's group of eclectic restaurants downtown. Range, Bridge, Rooster, Bailey's Chocolate Bar, and more to come. Need to update my profile! I may be famous but aren't you driving a car you WON somewhere?

I WAS driving a convertible that I won in a raffle, but I had to trade it in 2 years ago for a carseat friendly ride. I'm in a Toyota Highlander now, that the convertible paid for in full. No arguing there.

Not knowing much about the restaurant biz, can you explain what a Commisar does for me?

Ahem, bad grammar.
Can you explain to me what a Commisar does?

Late to reply! A Commissar keeps a centralized kitchen operating and sending out top-quality prepped food and ingredients to the satellite kitchens in the restaurants. I also buy the majority of the ingredients that the company uses to feed the 400,000 people we served last year.
